Pumpkin Pie from Crete - (Gliki kolokythopita)

INGREDIENTS
    (for 8 persons)
  • 1 1/2 kg of pumpkin
  • 2 onions
  • Salt
  • Pepper
  • mint
  • 1 lb. of feta cheese
  • 2 or 3 eggs

    For the dough

  • 1 cup of butter
  • 1 cup of oil
  • 2 egs
  • Salt
  • 1 cup of milk
  • 1 tspn baking powder
  • As much flour as needed
METHOD
Brown the pumpkin and the onion and cook till mushy. Drain and add mint, grated feta and the eggs. Prepare the dough and roll it open. Spread half of it in a buttered baking pan, spread the mixture, and on the top the second half of the dough. Bake till golden.
